We love this fiery smoke of a cheese. It is particularly good to use as a substitute for mayo on recipes with chicken, egg, or potato. Orcona's Chipotle is simply the best and it is really just a happy coincidence that they are a few stalls down from us at the Hawke's Bay Farmers Market. We love using this cheese on our chipotle tofu tacos using tortillas from our friends at Hands Down and on our chipotle Bostock chicken sandwiches.
